Maar via een omweg toch weer suiker, zo lees ik in een stukje van dr Kellon:

Getting back to sugars and starch, they're not equally dangerous in terms of blood sugar (glucose) and insulin rises. Only glucose triggers the insulin response. Starch is digested 100% to glucose before being absorbed. Legumes have higher starch than most grass hays. They also have more glucose than grass hays. The predominant sugar in grass hays is sucrose. Sucrose is built of 1 glucose molecule + 1 fructose molecule so it's only digested to 50% glucose.

The high glucose yield from starch is probably why some very sensitive insulin resistant horses don't tolerate low NSC but high starch feeds or legumes like alfalfa/lucerne or clover. To break it down:

Grass hay 8% sugar + 2+ starch = 4% glucose from the sugar and 2% from the starch = 6% glucose

"Safe" feed 8% starch and 2% plant sugar = 8% from starch and 1% from sugar = 9% glucose

Beet pulp 1% starch and 4% sugar (sucrose) = 0.5% from starch and 2% from sugar = 2.5% glucose

Alfalfa hay 4% sugar + 6% starch = 2% + 6% = 8% glucose (actually probably a little higher because it has more glucose than grass hays)
